Spinach, vegetable and bacon quiche
Ingredients:
- 200g bacon pieces
- 300g baby spinach
- ½ cup of frozen mixed vegetables (corn , carrot and peas)
- 150g sour cream
- 2 eggs
- Herbs for seasoning
- Puff pastry – 1 sheet
- 50g of cheese
Directions:
- Pre heat oven to 180 degrees
- Use a quiche dish and apply butter to the bottom and inside of the dish to ensure that the puff pastry won’t stick
- Line the dish with puff pastry and then set to one side
- Next add the eggs and sour cream into another bowl and mix until well combined and then add the vegies, bacon and extra herbs for flavour and the cheese is also added
- The spinach is then placed on top of the puff pastry and spread evenly
- Next the mixture is poured on top of the spinach and spread over evenly
- Pop in the oven and cook for about 20 minutes
